Create your desired settings in Photoshop (presumably you are using Photoshop), then use Bridge to sync your color [management] settings across the programs. What are the following settings for all programs involved: File > Document Color Mode in AI; Image > Mode in PS. Edit > Color Settings. View > Proof Setup.
Now, go to the right menu and select the “Color” window. In the Color window, click on the “three dashes” icon in the top right corner. From there, change CMYK to RGB by clicking on the “RGB” option. You can now change the RGB values for the colors you want to change!

If you select a Print preset, you will get Print swatches. If you decided that your Print preset should be in RGB, you will get Print CMYK Swatches that are converted to RGB. Choose in the Color Panel menu CMYK and choose any color swatch except White, you will see converted swatches. 1 Upvote.

Spot colours are not CMYK colours. They are a single solid coloured ink - mixed from other colours according to a formula guide created by Pantone. If you adjust the spot colours in Illustrator using the colour swatch options by moving the sliders, you are only changing the display colour, the colour isn't really changing.
To do so, Click the "Window " menu, then click "Swatches." Click "Open Swatch Library," then "Color Books" and then choose one of the of the Pantone color books. You can then click the "Find" text

2. If exporting images for review via email/web links, using RGB for the color space is generally preferred. While there can be a color shift, typically going from CMYK to RGB isn't a problem. The RGB gamut includes all the CMYK colors, so you aren't inherently altering the gamut of available colors (unlike going from RGB to CMYK).
